Wine making : In carbonic maceration for Carignan and Grenache, traditional for the
other vines.

Tasting : The abbey of Monges produces rounded, fruity and well balanced
wines. They have a full palate with a delicate and silky side to it,

which gives us the impression of a Feminine wine.

Serving temperature: 14 to 16° C

L’Opéra de Villerambert-Julien, made from select yields of Syrah, Grenache and Mourvèdre harvested very ripe, vinified and aged without using barrels offers power and suppleness strength and softness as well as a generous aromatic presence. This wine owes its success to its varied possibilities of adaptation to many different dishes.

Grape-variety : 30% Grenache, 65% Syrah, 5% Mourvèdre

Vinification : Total destalk. Vatting for 22 days. 7 pumping over. Fermentation about
30°C – 86°C. Aging based on a light contribution of oxygen by racking
every three months. Fining after malolactic fermentation in tank. Final
sterile filtration before bottling.

Alcohol content : 13°5

Tasting : Spicy, fruity and elegant notes. Nice ruby colour. Strong aromatic
concentration with smooth and silky tannins on the palate. Ripe black
and red fruits, cacao and liquorice.
Serving temperature: 17 to 18°C

Suggested dishes : Red and white meat. Traditionnal terroir dishes.

Grape-variety : Merlot, Cabernet Sauvignon, Syrah, Grenache

Soil : Soils are an important factor in the quality of wines. Soil are mainly
composed of limestone and chalk producing very colourful wines with
an aging ability. In our region, stones absorb heat from the sun during
the day and radiate it back to the vine during the night.

Vinification : Grapes are harvested very ripe to develop aromatic concentration (low
yield 45 hl/ha), de-stemmed and fermentation is temperature-controlled.
Classical red wine fermentation.

Alcohol content : 13°5

Tasting : Spicy, fruity and elegant notes. Nice ruby colour. Strong aromatic
concentration with smooth and silky tannins on the palate. Ripe black
and red fruits, cacao and liquorice.

Producer: Château d’Or et de Gueules

Grape Variety: 45% Syrah, 20% Grenache, 35% Carignan

History: Domain was born in 1998. The name comes from the family crest of Diane de Puymorin, with its colours reflecting the personality of the wines it produces-gold (‘Gueules’ in old French) for the character, power and round.

Soils: Lies on the southern side of the Costières de Nîmes, between St Gilles and Generac, close to the Camargue. The vineyards face south-east on a terroir of galets roulés (famous rounded pebbles also found in areas such as Chateauneuf du Pape).

Production: 35 hl / ha

Vinification: Grapes harvested by hand for the old mourvedre ans carignan grapes. The grape is fermented with long traditional extractions (28 days). Two years aged in tank in order to smooth the tannin.

Alcohol Contents: 14°

Tasting: Deep coloured, spicy and concentrated mouth with a very good length. Complex nose of dark fruits freshly cracked black pepper and herbs of Provence. The palate is full bodied with rich, juicy fruit filling the mouth. The wine is really ample and marked by elegance…

History : The Solid mass of Clape was an island at the time Gallo-Roman. The island of Clape is connected little by little to the continent by the combined action of the alluvia of the Aude and the activity of the offshore bar. Its soil is classified in 1985.
Family property since 4 generations, located at the South-eastern end of the Solid mass of Clape

Vinification : Reasoned culture, systematic limitation of the yields, manual grape harvest on AOC wines.

Producer : Château de Lascaux

Grapes variety : 60% Syrah, 40% Grenache

History : 45 hectare family owned winery located in the Pic St Loup area of
Languedoc in the foothills of the Cevennes mountains. Climate is
mostly Mediterranean.

Soils : The vineyards are planted on a soil resulting from the breakdown of
calcareous rocks by water, frost and temperature change during one of
the last cold stage of the Quaternary period. Organic farming
certification process has been initiated for those lots in September
2006.

Vinification : Selective picking and harvest destalked. Traditional winemaking with 3
week vatting. Control of temperature during vinification. Soft and
regular punching down. Aging in tanks during 14 months before
bottling. No filtration to retain maximum character.

Alcohol contents : 14°

Tastings :

Colour : Dark ruby garnet colour.

Nose : Rich and complex with notes of white pepper, cacao, cherry and under
wood.

Mouth : Round structure with fine tannins; same aromas as in the nose…even
fruitier.

Served at : 14 to 16°

Recommanded dishes : In its youthful state, this wine will be a perfect match for “terroir” food.

After 2 years it will be a great partner for red meat with sauce.

History : THE MADURA estate, is a small vineyard of SAINT-CHINIAN appellation, which we could qualify as vineyard mosaic because of its big variety, both at the level of the grounds and its grape variety of its height or its microclimates

Soil : Clayey Limestone for Mourvèdre, Syrah, Carignan and Grenache.
Sandstone for Syrah, Carignan and Mourvèdre
Schists for Grenache and Syrah

Vinification : Manual grape harvest in trays with sorting.
Traditional vinification in tank from 4 to 6 weeks.
Maturing in concrete tanks and barrels (for Syrah and Mourvèdre) on lies.
Treatment of the wine: not stuck, not filtered.

Alcohol content : 14°

Tasting : .The first nose shows aromas of cherry then arrive notes of sweet spices, “garrigue”, of cocoa and roasting. This group constitutes a mellow bouquet with plenty of character.
The mouth shows a big flexibility with a very elegant texture and balanced. Freshness is present on finish contributing to its length in mouth.

Serving temperature: 14 to 16° C

Suggested accompanying dishes : In sauce or grilled red meats, white meats and Mediterranean dishes

barrels and two years in tank in order to smooth the tannin.

Tasting: Deep coloured, the robe is like ink. Complex nose of dark fruits,
vanilla and coffee. Spicy and concentrated mouth with a very good
length. The mouth is really ample, concentrated and the taste lingers.

Producer : Pierre GAILLARD

Grape-variety : 55% Syrah, 35% Grenache, 10% Mourvèdre.

Soil : Brown schist

Vinification : A good trellising allows to develop an important leaf surface and yields are
controlled, allowing to pick concentrated grapes, rich in polyphenol which are
at the root of full-bodied wines.

Vinification in vats of 50 and 70 hl, traditional, beginning with a light cold
maceration (3/4 days) to extract and fix color all with developing aromas of
cool fruit, then alcoholic fermentation (25 °) thanks an extractive way with
punching of the cap, daily pumps over (3 a day) and finally a heat maceration
before fermentation allowing the extraction of the most polymerized tannins
and so to give to the structure a volume and its final largeness. Grape harvest is
de-stemmed before to restrict plant aromas and too rural tannins.
Wines of syrah, mourvèdre and a well-builted of Grenache are ageing in
barrels, a quarter in new barrels and 14 months of ageing in tank and barrels.
Alcoholic Content : 13° 5

Tasting : This rich and concentrated powerful wine is however very balanced. It can be
drinkable young because it is on his fruit but however has all potential to get
old in a very harmonious way.

Serving temperature : 15 ° C.

Suggested dishes : Grilled meats

Ageing : 1 to 10 years.
